A Novel Antioxidant Ingredient For Food And Beverages

Abstract: Antioxidants are substances that block the activity of chemicals like free radicáis. Free radicáis are highly reactive substances which can cause cell destruction and there by affecting the body leading to many diseases. There are varieties of anti oxidants added in the food matrix in order to preserve it. Some of them are synthetically derived and some are from natural sources. Ferulic acid derived from rice bran oil is one such natural antioxidant. Unique extraction process involves the enrichment of active component to highest purity.

BACK GROUND OF INVENTION

Oxidation of unsaturated lipids is a major cause of food quality deterioration by giving rise to the development of off-flavour compounds and loss of nutritional valué of food products. The mechanism of lipid oxidation reactions involves free radicáis and reactive oxygen species, while it is catalysed by light, temperatura, metáis , enzymes etc. Antioxidants are substances that, inhibits the oxidation of other molecules. When present in foods , even at low concentrations, it markedly delay or prevent the oxidation of the substrate by quenching free radicáis or scavenging oxygen. Antioxidants play a major role in preventing or delaying autoxidation and have attracted much attention as food stábilizers, dietary supplements and natural health products. This fact sheet focuses on the use of ferulic acid as an antioxidant in foods and beverages.

2 SUMMARYOFTHEINVENTION.

Anti oxidants helps in preservation of food materials. Many of the anti-oxidants added are of synthetic origin. These synthetic deriyed ones have adverse health effects when used in high dosages. On this regards natural anti-oxidants come in to the scenario. Comparing to synthetic antioxidants natural anti oxidants has much less side effects. One such natural anti-oxidant used is Ferulic acid .Ferulic acid is mostly found in wheat bran, sugar-beat pulp, corn kernel .rice bran oil etc. Ferulic acid (4-hydroxy 3- methoxy cinnamic acid) is a ubiquitous phenolic acid which can be eásily absorbed and metabolised in the human body. Ferulic acid shows a concentration dependent preventive effect on discoloration. It shows many physiological functions, including anti-inflammatory, anti-thrombosis and anti cáncer activities. It is found to be effective against coronary disease, lowers cholesterol in serum and iiver. It is now universally accepted in food, beverage and cosmetic industry as a good natural anti-oxidant.

3. DESCRIPTION OF INVENTION

Ferulic acid is a good natural anti-oxidant used in food and beverage industry. The structure of ferulic acid is described below:
In many conditions the bioactive compound that needs to be isolated determines the criteria for solvent type, and extraction parameters. A resulting crude extract that could be further purified. Our unique process involves extraction and further purifícation of ferulic acid to highest purity with good recovery also.
