Abstract
The present invention relates to a process for the preparation of nutritionally enriched1,3-diacylglycerol-rich oil. The present invention particularly relates to an enzymaticprocess for the production of nutritionally enriched diacylglycerol (DAG)-rich oil whichincludes, hydrolysis of mixed vegetable oils exemplified by refined rice bran andsunflower oils using a non-specific lipase like Candida cylindracea lipase followed byesterification of mixed vegetable oil fatty acids with glycerol employing immobilized 1,3-specific lipase like Lipozyme RMlM (Rhizomucor mieheo lipase. The 84% DAG-rich oilconsists of 66% of 1,3-DAG and 18% of 1,2-DAG and 16% of TAG along with nutritionalconstituents like gamma oryzanol, tocotrienols, tocopherols and phytosterols originatingfrom rice bran oil.
