Specification

Field of invention
The present invention relates to food product development. It further relates
to making oft he nutritious low-fat spread (Golden Palm Germ) from the germinated
seed embryo of Palmyra Palm with other added palm products.
5 Objects of the invention
The main object of the invention is to provide a low-fat nutritious spread
made from genilinated seed embryo of Palmyra palm, Palm fruit, Palm sugar
wJJhout_added table sugar, integrating HACCP (Hazard Analysis and Critical Control Point) in product development to ensur~-th~ saf~ty ~~crthe q;aiityoltf1-e~~
10 product. The added Palm sugar has a low Glycemic index as it does not raise the
blood glucose level. The spread can be recommended for diabetic patients in
moderate quantities.

10 Description of the invention
The present invention provides a nutritious and healthy germinated seed
embryo of Palmyra palm spread without added table sugar.
Making of germinated seed embryo Palmyra palm:
Preliminary Preparation

• Collection of Palm fruit: alter extracting the pulp from the fruit, the seeds·
are sown in soil beds, and the moisture level of the soil is maintained.
• The seed is allowed to germinate for forty days.
• The forty-day germinated seed embryo of Palmyra palm were harvested,
cleaned under running water, and the spongy embryo is extracted from the
seed; spoiled embryos are excluded .
• Wash the utensils with soapy water and rinse
• Immerse the· utensils in 135degree Celsius boiled water for 3 minutes and
remove it with help of sterilized tongs.
Extraction ofpnl11 from germinated seed embryo of Palmyra palm: Germinated
seed embryo of Palmyra palm is cut into pieces and made into a pulp with addition
of water in a mixer at 3- speed 18,000 rpm for I minute till a smooth consistency is
reached.
5 Processing of spread:
Ingredients:
Germinated seed embryo of palmyra palm pulp- 66.67%
Palm lruit pulp- 2.67%
White palm sugar powder- 20%

Sodium metabisulphite- 0.03%
Method of Preparation:
• Cut I OOg of germinated seed embryo of Palmyra palm into pieces and use a
mixer to blend with 50ml of water.
• In a tlat thick bottom saucepan add germinated seed embryo pulp, palm fruit
pulp, soy protein isolate, white palm sugar powder, and add I 00 ml of water,
bring to boiling temperature.
• Add pectin and stir.
• Continue cooking till the mixture thickens .
• Dip a spoon into the spread, the slide the finger down the spoon to see if it
leaves a clean line. If it does, the spread is done. If not, it needs to cook
longer. The end point is a brix value of 67-69% which is recorded using
25 refractometer.
• Add sodium metabisulphite
• Remove ti·om heat and fill it in a sterile glass jar
• Store it in the refrigerator
The ratio of germinated seed embryo of Palmyra palm: Palm Fruit: White Palm
sugar powder for the spread is 20: I: 6

Step 9: Combine the ingredients in a flat bottom thick sauce pan
Step I 0: Add Citric acid and Pectin
Step II: Cook the mixture to a boiling temperature over medium- high heat and
stir continuously until th'e mixture thickens.

Step 13: Add Sodium Metabisulphite (Preservative)

Advantages:
The Palmyra palm is known as "Karpaka viruksham" in Tamil. An all~
Golden Germ palm spread is formulated from the germinated seed embryo of
Palmyra palm, Palm fruit pulp and white palm sugar powder. In order to manage
5 non-communicable diseases, there is a growing need for functional foods. The
current invention is conducted with the germinated seed embryo of Palmyra palm.
The forty-days germinated seed embryo of Palmyra palm has higher nutritive and
pharmacological benefits like anti-inflammatory (Gallic acid, Chlorogcnic acid, alpha terpinyl acetate), antihypertensive (Hexadecanoic acid, Myristic acid, Oleic
acids), antimalarial, antiallergy (E-9-Methyl-8-tridc-cen-2-ol, acetate), anti-cancer
(Gallic acid, 4H- Pyran -4- one) and cardioprotective property(2-
Bromotetradecanoic acid, Gallic acid, Stearic acid) in nature.(Prasasd A.R.B ct al.,
2022)
15 The nutritional composition of the spread was analyzed (energy, total carbohydrate,
sugars like fructose, sucrose, and glucose, protein, total dietary tiber, calcium,
phosphorus, potassium and iron), along with its physiochemical properties (texture,
pH}, microbial safety (total plate count, water activity), and sensory characteristics.
The spread made with the germinated seed embryo of Palmyra palm may be used
20 as a therapeutic and functional food. The nutrient-dense spread made from the
germinated seed embryo of the Palmyra palm will be a healthy alternative to highcalorie,
high- fat spreads that arc deficient in other vital nutrients
Unique feature of the invention
All Palm low fat spread is made with germinated seed embryo of Palmyra palm as
25 main ingredient along with palm fruit, white palm sugar powder, especially fortyday
germinated seed embryo of Palmyra palm, was selected beeause of its high
nutritional value (rich content of fructose, Potassium, phosphorus, iron, zinc,
calcium and vitamins) and apart from these nutrients, phytochemicals, crude fiber
are present in germinated seed embryo, which are responsible for reducing fasting
blood glucose levels and has anti-cancer, anti-inflammatory and antioxidant
properties.
The palm sugar has less glycemic index of 35 when compared to cane sugar
glycemic index of60. Hence palm sugar is good to include in diet as it doesn't raise
