Lactobacillus Mali Strain And Uses Thereof

Abstract: The present invention relates to a novel Lactobacillus mali CJST01 strain that has excellent steviol glycoside transglycosylation activity, and a method for producing steviol glycoside using same. The novel Lactobacillus mali CJST01 strain has excellent steviol glycoside transglycosylation activity compared to Lactobacillus mali DSM20444 strain which is known to produce steviol glycoside transglycosylation, thereby shortening an enzyme reaction time in a manufacturing process. The steviol glycoside produced by using the strain has an advantage of having better taste quality or flavor than alpha-1,4-linked steviol glycoside and rebaudioside M. In addition, the transglucanized rebaudioside A produced using the Lactobacillus mali CJST01 strain has reduced off-taste and off-flavor and excellent solubility.
