Abstract: ABSTRACT A METHOD OF PREPARATION OF SUGAR FREE AND DIABETIC-FRIENDLY COOKIES AND COMPOSITION THEREOF In this invention is jackfruit is the tropical fruit which is nutritious. Seed in jackfruit containing about 1/3 is all go out of use, cause the wasting of resources. Jackfruit seed is of high nutritive value, and mainly contains 64.21% starch, 11.86% protein, 2.10% reduced sugar, and its protein is rich in 8 kinds of amino acid needed by human. The component of raw material of biscuit, includes: - Jackfruit flour, Coconut Sugar, coconut oil. The present invention also provides a kind of preparation method of the full powder cookies of jackfruit seed, comprises the following procedure. Collect all ingredients like jackfruit seed, coconut sugar and coconut oil then sundry the jackfruit seeds for 2-3 days to reduce its moisture content to 7-8%. Remove the jackfruit seed coat by rubbing them on rough surface. Then grind the dried jackfruit seeds to make fine flour (powder). Take jackfruit flour, coconut sugar and coconut oil for preparation of dough. Leave the dough at rest for 20 minutes and then convert it into desirable shapes. Pre-heat the oven at 80-100oC for 3-5 minutes. Grease the baking tray with few drops of coconut oil. Put the cookies on baking tray and keep it in oven. Set the oven temperature at 180-220oC for 15-20 minutes. Take out the baked cookies from the oven and keep them at room temperature until they cool down for packaging.
