A Method Of Protein Hydrolysis And Uses Thereof

Abstract: The present disclosure relates to a method of hydrolysis of a mixture comprising whey protein, soy protein, and moringa seed cake powder substrate. The hydrolysis of the mixture involves the use of citric acid, the addition of which, assists in denaturing protein to allow an enhanced proteolytic cleavage using proteases. The proteolytic cleavages provides for a hydrolysate which exhibits angiotensin converting enzyme inhibitory activity
