Abstract: The present disclosure related with the process microgreens based powder by using various drying techniques. This invention helps in improving storage life of microgreens. It helps to maintain nutritional value of microgreens. The incorporation of microgreens based powder helps in improving characteristics and shelf life of different food products. This invention can be used further in various types of food products to improve the bioavailability of nutrients. Furthermore, the final microgreens based powder may useful in cosmetic and pharmaceutical sectors.

BACKGROUND
[002] Consumer requires high-quality foods products with high nutritional value,
minimum cost and short time for preparation. Microgreens have more popular in
upcoming years as food ingredients due to their unique characteristics like its rich in
nutritional value, flavor, colors and texture. The microgreens have a low shelf life
and it highly sensitive to harvest and postharvest handling practices, so there is need
to maintain the quality of microgreens by using alternative techniques.

followed by the extraction of microgreen juice. At last the juices prepared are freeze
dried using different techniques.

growing medium. Firstly all microgreens disinfect with calcium hypochlorite
solution (2%) for 10 minutes, after that rinsed and wash with distilled water and
seeds were sown in trays filled with soil. The growing condition is normal room

temperature with natural light it used. The broccoli microgreens grown in trays and
carefully harvest to above the soil surface after first true leaves.

water to remove the soil and reduce the microbial load prior to processing. The wash
microgreens are taken for juice extraction with the help of juicer mixer. The
obtained juice filters through filter membrane and store it cold place prior to next
processing.

chosen for the said preparation as shown in the figure 1.
