Abstract: HOPPER is termed as Palappam, Poha, Appa, Appam A food processing machine for the cooking of “ Appam or Poha”, comprising The three discs are linked by shafts , in which the pitched bottom of the appam chatty is engaged with worm gear and a tilting mechanism to achieve the Appam pattern ( thin frill outer crust and soft steamed puff at the middle)inside the cooking pan. Since the process of appam making is steam cooking, the machine is equipped with a lid closure mechanism which facilitate steam cooking of the batter dispensed to the cooking pan.“Appam or Poha” is made up of fermented batter. The fermented batter for “Appam or Poha” has been stored in a hopper which is equipped with determined volume dispensing valve system and stirring mechanism.The hopper is designed in such a way to yield the maximum of the stored fermented batter, to facilitate the yield, hopper is equipped with motor aid sliding valve opening and closure mechanism . The determined dispensing mechanism will dispense the required volume of batter needed for cooking “Appam or Poha”.The stirring mechanism inside the hopper prevents the sedimentation of fermented batter ingredients at the base of hopper.The equipment is having a level sensor to intimate the low level notification of batter inside the hopper,upon the notification the batter shall be refilled. In order to minimize theradiated heat impact from core cooking area on the stored fermented batter inside the hopper, the hopper base is isolated with heat insulation ( PU) based panel.The entire equipment is designed such way by synchronising series of actions simultaneously by motor drives. In current scenario “Appam or Poha” is a intensive skilled and labour based process.This invention can deliver revolutionary impact in Appam or Poha making process in food service segments such as catering , hotels and QSRs.This equipment is designed with a vision of compactness,GMP,GHP,ease of handling and cleaning.
Claims:We claim,
1. A fully automated appam making machine with zero skilled labour.
2. All motors used are DC motors, thus minimum energy consumption
3. The equipment is table top and meets the space constrains of restaurants and cafes.
4. The equipment is mobile and it can be easily transported
5. The tilting and rotary mechanism facilitates consistent product output.
6. The circular teethed disc and worm gear engagement aided by bearing renders seamless and smooth operation.
7. The determined volumetric batter dispensing systems renders portion control throughout the batch and minimum wastage of batter.
8. The process of appam making been simplified and the texture of appam such as crispy outer frill and puff centric appams been achieved by tilting and rotary mechanism. The appam chatty mounted on the tilting plate achieves the forming of appam batter to uniforms appams .
9. All protocols parameters are monitored by sensors and limited by limit switches henceforth eliminating the chances of errors , Description:The accompanying drawings are intended to provide further understanding of invention and are incorporated in and constitute a part of invention. The tilting plate (101) which have tilting angle of 35 degree angle facilitate the batter to spread over the appam chatty (102). The linear guide rail (103) functioning as the lid open and closure mechanism. An exhaust fan (104) functions to exit out the steam generated while appam cooking process. A closure door (105) which covers the hopper loading area. The entire equipment is build up of SS frame and SS sheet enclosures (106). The stirring mechanism which aid the stirring of the batter inside the hopper to prevent clogging of batter(107). The entire machine is a single switch operation controlled by a centralised control panel (108 & 109). For mobilising the tilting plate (101) a motor drive is attached to the central shaft (110). The base of the equipment is mounted with levelling screws and rubber bush (111) .

The tilting plate assembly comprises – Tilting plate (101), Central shaft (302,308) which is mounted to the frame from both sides to achieve tilting action. A circular flange ( 304) is attached to circular teethed disc ( 304). A circular teethed disc (304) is engaging with worm gear (306) to achieve rotary motion which aids the equipment to spread the batter in circular pattern. To enhance the rotary motion circular discs (304) is attached with bearing with OD 19mm and ID 6mm (307) .The rotary mechanism is attached to motor drive (303). The angular movement of the tilting plate and rotary motion of teethed circular disc is controlled by limit switches.

The base frame assembly comprise – Gas burners ( 401) , Auto ignition filament ( 402),Gas burner mounting plate ( 403) , Gas pipe ( 404) .

Hopper assembly comprises –SS 316 Batter tank 28 litres capacity( 501), Hopper frame (502), Stirring mechanism ( 503) , Valve open and closure mechanism for determined volumetric batter dispensing ( 504) and motor- sensor assembly.

After 360 degree rotation – Tilting plate tilt back to home position

In 60 secs the lid mechanism resumes back to open position
