Composition Exhibiting Enhanced Saltiness Perception

Abstract: The present disclosure discloses a saltiness enhancer composition comprising monocalcium phosphate, dicalcium phosphate, tricalcium phosphate, and table salt 5 present in a weight ratio range of 1-2:1-2:3-8:15-30. The present disclosure also discloses a composition comprising a food product and said saltiness enhancer composition. The salt enhancer composition provides enhancement of saltiness in the food product.

FIELD OF INVENTION
[001] The present disclosure broadly relates to a condiment composition, and particularly refers to a saltiness enhancer composition.
BACKGROUND OF INVENTION
[002] Salt has been widely used as an ingredient in various food products for the purpose of providing flavor and desirable salty taste in food products. The salty taste of salt is generally the taste of sodium chloride. In addition to improve the food acceptability, salt is also used as a preservative. Salt is widely used in meat industry to improve texture and fat binding properties of processed meat products (Reducing salt: A challenge for the meat industry, Desmond, Meat Science 74 188-196 2006). Being an essential nutrient, sodium plays a vital role in maintaining the body's water balance and blood circulation (The cell biology of taste, Chaudhari and Roper, J. Cell Biol. Vol. 190 No. 3 285-296 2010). Salt fortified with iodine plays a major role in providing the essential iodine nutrient which otherwise is not a part of daily diet.
[003] Although sodium is an important food ingredient, it has been observed that the excessive dietary sodium intake is associated with a number of health problems such as increased hypertension, kidney diseases, etc. Consequently, various efforts have been deployed to minimize the dietary sodium intake by an individual, wherein WHO recommends reduction of salt intake to 5g per day (WHO Guideline: Sodium intake for adults and children 2012).
[004] Conventionally, a number of sodium-free composition are available in markets as salt substitutes to replace sodium chloride in foods. For instance: US2471144A discloses a salt substitute, wherein the salt substitute comprised of chlorides-of potassium and ammonium constituting the primary saline constituents. [005] US4243691A discloses a sodium free substitute consisting of 5'-nucleotides such as 5'-inosinic acid or its physiologically acceptable nonsodium salts, and 5'-guanosinic acid or its physiologically acceptable nonsodium salts, an amino acid mixture such as a nonsodium containing hydrolyzed vegetable protein, a sugar such

as glucose, a potassium phosphate such as dipotassium orthophosphate, a potassium chloride, and combinations thereof.
[006] US2601112A refers to an edible composition comprising a mixture of water-soluble saline tasting salts of potassium and ammonium in a major proportion, and a salt of choline having an acid reaction in a minor proportion. [007] Among all the salt substitutes that are available in market, the most popular salt substitutes are potassium chloride. However, these salt substitutes fail to provide desirable food sensorial perception.
[008] Accordingly, there remains a need in the art to provide a composition that provides enhancement of saltiness perception while retaining the taste of food products.
SUMMARY OF THE INVENTION
[009] In an aspect of the present disclosure, there is provided a saltiness enhancer composition comprising: (a) monocalcium phosphate; (b) dicalcium phosphate; (c) tricalcium phosphate; and (d) table salt, wherein monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is in a range of 1-2:1-2:3-8:15-30.
[0010] In another aspect of the present disclosure, there is provided a process for preparing the saltiness enhancer composition comprising: (a) monocalcium phosphate; (b) dicalcium phosphate; (c) tricalcium phosphate; and (d) table salt, wherein monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is in a range of 1-2:1-2:3-8:15-30, said process comprising: (i) obtaining monocalcium phosphate; (ii) obtaining dicalcium phosphate; (iii) obtaining tricalcium phosphate; (iv) obtaining table salt; and (v) contacting monocalcium phosphate, dicalcium phosphate, tricalcium phosphate, and table salt, to obtain the composition.

product, meal replacement product, soup product, dehydrated and culinary food,
frozen food, canned food, snack food, dips, oils and fats, seasoning, and
combinations thereof.

[0027] To aid in reducing dietary sodium intake, several low-salt substitutes or salt substitutes that have been deployed to provide salty taste in food products, suffer from various disadvantages. These salt substitutes have been associated with bitter and undesirable taste properties that may also affect the food products taste and palatability which consumers may find unacceptable.
[0028] To overcome the afore-mentioned problems, the present disclosure provides a saltiness enhancer composition deploying non-sodium salts and table salt to enhance saltiness of food products. The present disclosure further provides a saltiness enhancer composition comprising: monocalcium phosphate; dicalcium phosphate; tricalcium phosphate; and table salt, wherein monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is in a range of 1-2:1-2:3-8:15-30. The saltiness enhancer composition enhances saltiness perception while maintaining the sensorial attributes of the food products. Further, the saltiness enhancer composition of the present disclosure shows enhanced saltiness even at 25% reduced salt concentration.
[0029] In an embodiment of the present disclosure, there is provided a saltiness enhancer composition comprising: (a) monocalcium phosphate; (b) dicalcium phosphate; (c) tricalcium phosphate; and (d) table salt, wherein monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is in a range of 1-2:1-2:3-8:15-30. In another embodiment of the present disclosure, monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is in a range of 1.2-1.8:1.3-1.9:4-8:17-28. In one another embodiment of the present disclosure, monocalcium phosphate, to dicalcium

phosphate, to tricalcium phosphate, to table salt weight ratio is in a range of 1.3-
1.7:1.4-1.6:5-7:19-26.
[0030] In an embodiment of the present disclosure, there is provided a saltiness
enhancer composition comprising: (a) monocalcium phosphate; (b) dicalcium
phosphate; (c) tricalcium phosphate; and (d) table salt, wherein monocalcium
phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio
is in a range of 1:1:3-8:15-30.

enhancer composition comprising: (a) monocalcium phosphate; (b) dicalcium
phosphate; (c) tricalcium phosphate; and (d) table salt, wherein monocalcium

is 1:1:8:30.

enhancer composition comprising: (a) monocalcium phosphate; (b) dicalcium
phosphate; (c) tricalcium phosphate; and (d) table salt, wherein monocalcium

is 1:1:3:15.

enhancer composition comprising: (a) monocalcium phosphate; (b) dicalcium
phosphate; (c) tricalcium phosphate; and (d) table salt, wherein monocalcium
phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio
is in a range of 1-2:1-2:3-8:15-30, and wherein table salt has a purity in a range of
84-99%. In another embodiment of the present disclosure, table salt has a purity in a
range of 92-99%. In one another embodiment of the present disclosure, table salt has
a purity in a range of 94-99%. In yet another embodiment of the present disclosure,
table salt has a purity in a range of 94-99%.
[0034] In an embodiment of the present disclosure, there is provided a saltiness
enhancer composition comprising: (a) monocalcium phosphate; (b) dicalcium
phosphate; (c) tricalcium phosphate; and (d) table salt, wherein monocalcium
phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio
is in a range of 1-2:1-2:3-8:15-30, and wherein table salt has a sodium content in a

range of 30% to 39%. In another embodiment of the present disclosure, table salt has a sodium content in a range of 32% to 39%. In one another embodiment of the present disclosure, table salt has a sodium content in a range of 36% to 39%. [0035] In an embodiment of the present disclosure, there is provided a saltiness enhancer composition comprising: (a) monocalcium phosphate; (b) dicalcium phosphate; (c) tricalcium phosphate; and (d) table salt, wherein monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is in a range of 1:1:3-8:15-30, and wherein table salt has a purity in a range of 84-99%.

EXAMPLES

Unless defined otherwise, all technical and scientific terms used herein have the same meaning as commonly understood to one of ordinary skill in the art to which this disclosure belongs. Although methods and materials similar or equivalent to those described herein can be used in the practice of the disclosed methods and compositions, the exemplary methods, devices and materials are described herein. It is to be understood that this disclosure is not limited to particular methods, and experimental conditions described, as such methods and conditions may apply. The working and non-working examples as depicted in the forthcoming sections highlight the criticality of the working percentages of different components in achieving the saltiness enhancer composition of the present disclosure. It is further specified that the presence of monocalcium phosphate; dicalcium phosphate; tricalcium phosphate; and table salt in a weight ratio range of 1-2:1-2:3-8:15-30 is critical is critical so as to achieve the saltiness enhancer composition that shows higher saltiness enhancement The absence of any of the component specified above or presence of any of the component outside the disclosed weight ratio range fails to provide the desired effect.
Materials and Methods
[0077] The components-monocalcium phosphate; dicalcium phosphate; tricalcium phosphate; and table salt utilized for arriving at the composition of the present disclosure were commercially procured. Particle size of table salt used in above compositions can range from 20 - 1100 microns. Particle size of other three ingredients i.e. mono-, di- and tri- calcium phosphates can range from 4 to 30 microns. EXAMPLE 1 Process for preparing the saltiness enhancer composition in a solid matrix:
[0078] Monocalcium phosphate, dicalcium phosphate, tricalcium phosphate and table salt were weighed in required amounts depending on the combinations were

obtained. Monocalcium phosphate, dicalcium phosphate, tricalcium phosphate and
table salt were further contacted and dry blended, to obtain the saltiness enhancer
composition.
[0079] The saltiness enhancer composition was prepared by weighing the individual
components (monocalcium phosphate, dicalcium phosphate, tricalcium phosphate
and table salt) in the disclosed weight ratios. Monocalcium phosphate, dicalcium
phosphate, tricalcium phosphate and table salt were further contacted and dry
blended, to obtain the saltiness enhancer composition. The process was carried out
at room temperature (and can be extended to the temperature stability range of the
individual components).
Process for preparing various combinations of salts in a liquid matrix:
[0080] Monocalcium phosphate, dicalcium phosphate, tricalcium phosphate and
table salt were weighed in the disclosed weight ratios. Further desired amount of
water was added to achieve the concentrations as mentioned in Table 4. The liquid
matrix was vortexed and further evaluated for their saltiness profile.
EXAMPLE 2
Selection of enhancers
[0081] Various ingredients were evaluated for their taste which can be utilized to provide saltiness enhancers of the present disclosure. The taste of these ingredients was evaluated separately by using individual ingredients in powder form as well as in liquid matrix. [0082] Table 1 shows various ingredients that were evaluated as saltiness enhancers.

Based on the observations made in Table 1, it was observed that all the ingredients used in powder form and liquid matrix had a chalky taste.
EXAMPLE 3
Saltiness profile of enhancers in liquid matrix
[0083] The ingredients such as calcium carbonate, monocalcium phosphate and calcium silicate as mentioned in Table 1 were taken further to evaluate their saltiness profile in liquid matrix in combination with Table salt.
[0084] For this purpose, sodium chloride from table salt was used as control solution with max concentration at 500mg/50mL. Up to 75% reduced salt concentration solutions were prepared. These reduced concentrations were now prepared in combination with different ingredients (calcium carbonate, monocalcium phosphate and calcium silicate) so as to make up the concentration to 100%. The combinations of the afore-mentioned ingredients and reduced salt concentrations are given in Table 2 below. [0085] Table 2

[0086] After the preparation of different samples consisting of combination of different ingredients and reduced salt concentrations, the saltiness profile of each test sample was evaluated on the basis of saltiness ratings on a scale of 1-9 as shown in Table 3 below. Table 3
[0087] Referring to Table 2 and Table 3, it can be observed that sample 2c, 3c and 4c showed extremely low saltiness and hence these samples were eliminated. The combination of ingredients and salt present in a ratio range of 1:3 to 1:1 were evaluated for testing the saltiness levels when compared to equivalent amount of salt alone. Combinations with SHCM02 i.e. 3a-3b showed saltiness perception close to salt alone.
[0088] Therefore, it can be inferred from the above evaluation, that out of all the ingredients as mentioned above, phosphate form showing a higher saltiness rating of 7.5 (sample 3a) and 5.0 (sample 3b) as compared to equivalent amount of salt alone with saltiness rating of 7.3 (sample lb) and 4.5 (sample lc) were shortlisted along with 25% reduced salt concentration.

EXAMPLE 4
Saltiness profile of enhancers in solid matrix
[0092] The shortlisted mono-, di-and tri- forms of calcium phosphate were further evaluated in solid matrix for their saltiness profile, wherein potato chips were used as a solid matrix.
[0093] The application can however be extended to other food products such as snacks, extruded snacks, noodles, fried and baked products, etc. The saltiness profile of each ingredient such as monocalcium phosphate (SHCM03); dicalcium phosphate

(SHCMO 4); and tricalcium phosphate (SHCM05), were tested in combination with table salt and sprinkled on to potato chips. For the purpose of comparing the saltiness of each combination, chips sprinkled with salt alone was kept as a control sample. Table 5 shows the comparison of saltiness profile of potato chips sprinkled with combinations IV, V and VI with chips sprinkled with control sample (150mg/100g salt). Table 5:

[0094] Based on the observations made in Table 5, it was observed that combination VI having SHCM05 (tricalcium phosphate), showed slightly higher saltiness as compared to combination IV and V and control sample. [0095] Therefore, it can be inferred that although saltiness exhibited by combination VI was higher than all the control samples. However, there still

remained a need to provide a composition deploying a combination of monocalcium phosphate; dicalcium phosphate; tricalcium phosphate and table salt having a capability of showing much enhanced saltiness profile Therefore, in the subsequent examples, combination of all three phosphate salts and table salt was further evaluated for their saltiness profile. EXAMPLE 5
Preparation of enhancer combinations with 50% reduced salt concentration [0096] Various combinations of monocalcium phosphate, dicalcium phosphate, tricalcium phosphate and table salt with reduced 50% table salt concentration were prepared at different ratios. The combinations were tested on potato chips for the evaluation of saltiness profile of each combination. Table salt both in commercial as well as micronized forms were tested, and similar results were obtained. [0097] Table 6 as given below shows the saltiness profile of the combination monocalcium phosphate, dicalcium phosphate, tricalcium phosphate and table salt at different ratio. Table 6:

[0098] Table 6 above shows that combination VIII having SHCM05 (tricalcium phosphate) at a higher concentration than SHCM03 and SHCM04, exhibited saltiness similar to table salt alone. However, the combination VIII did not show any saltiness enhancement or same saltiness as exhibited by table salt alone. [0099] Further it was observed that combination IX and X showed similar saltiness to table salt alone but with a difference in profile, i.e. the aforementioned combinations provided an additional flavor like sourness, etc. [00100] Based on the observations made above, it can be inferred that combinations i VIII, IX and X prepared with 50% reduced table salt concentration were considered as the non-working examples of the present disclosure.
[00101] Therefore, it can be inferred that the combinations prepared with 50% reduced salt concentration failed to enhance saltiness perception as compared to table salt alone. Hence, in the subsequent example, combinations with up to 25% reduced salt concentration were further tested for evaluation of their saltiness profile.
EXAMPLE 6
Preparation of enhancer combinations with 25% reduced salt concentration
Combinations having monocalcium phosphate, dicalcium phosphate, tricalcium phosphate and table salt with reduced 25% table salt concentration were further I tested. The combinations XI, XII and XIII were sprinkled on to larger batch size of potato chips (lOOg).
Table 7 shows the comparison of saltiness profile of potato chips sprinkled with the aforementioned combinations and salt alone. Table 7

[00102] Referring to Table 7, it can be observed that combinations XI, XII, XIII showed acceptable and similar saltiness profiles as compared to the non-reduced salt sample. However, out of the three afore-mentioned combinations, combination XII, XIII having SHCM03 (monocalcium phosphate), SHCM04 (dicalcium phosphate), SHCM05 (tricalcium phosphate) and table salt in a ratio of 1:1:8:30 and 1:1:3:15 respectively, were most preferred for the evaluation of saltiness likeability and preference. Number of panellists were allowed to evaluate the saltiness of potato chips sprinkled with combination XII and XIII.
[00103] It can be depicted from Figure 1 and Figure 2 that both the combinations XII and XIII showed enhanced saltiness at 25% reduced salt concentration as compared to non-reduced salt control samples and were also preferred by most panellists. [00104] Therefore, it can be inferred from Table 7, Figure 1 and Figure 2 that combination XII and XIII were present in the disclosed weight ratio range of the

present disclosure exhibited enhanced saltiness enhancement. Hence, combination XII and XIII were considered as the working examples of the present disclosure. [00105] Overall, the combination of monocalcium phosphate; dicalcium phosphate; tricalcium phosphate; and table salt in the disclosed weight ratio ranges (1-2:1-2:3-8:15-30) is essential to have a saltiness enhancer composition. The absence of any one of the aforementioned component fails to provide the desired effect. Also, deviating from the disclosed weight ranges does not exhibit the desired result, as can be seen for the compositions VIII (1:1:2:4), IX (1:2:1:4), and X (2:1:1:4) in Table 6.
Advantages of the present disclosure
[00106] The present disclosure discloses a saltiness enhancer composition comprising: monocalcium phosphate; dicalcium phosphate; tricalcium phosphate; and table salt, wherein monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is in a range of 1-2:1-2:3-8:15-30. The saltiness enhancer composition shows enhanced saltiness at 25% reduced salt concentrations. Further, the saltiness enhancer composition can be utilized to provide food products such as confectionery, bakery product, dairy product, meal replacement product, soup product, dehydrated and culinary food, frozen food, canned food, snack food, dips, oils and fats, seasoning, and combinations thereof. The process for preparing the composition is quite simple and rapid. Also, the composition can significantly enhance the saltiness of the food products without producing any side effects in a subject consuming said food products. Also, the composition is cost-effective.

1. A saltiness enhancer composition comprising:
a) monocalcium phosphate;
b) dicalcium phosphate;
c) tricalcium phosphate; and
d) table salt,
wherein monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is in a range of 1 -2:1 -2:3-8:15-30.
2. The saltiness enhancer composition as claimed in claim 1, wherein monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is in a range of 1:1:3-8:15-30.
3. The saltiness enhancer composition as claimed in claim 1, wherein monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is 1:1:8:30.
4. The saltiness enhancer composition as claimed in claim 1, wherein monocalcium phosphate, to dicalcium phosphate, to tricalcium phosphate, to table salt weight ratio is 1:1:3:15.
5. The saltiness enhancer composition as claimed in claim 1, wherein table salt has a purity in a range of 84-99%.
6. The saltiness enhancer composition as claimed in claim 1, wherein table salt has a sodium content in a range of 30% to 39%.

The saltiness enhancer composition as claimed in claim 1, wherein monocalcium phosphate has a weight percentage in a range of 2.5-5% with respect to the composition, dicalcium phosphate has a weight percentage in a range of 2.5-5% with respect to the composition, tricalcium phosphate has a weight percentage in a range of 15-20% with respect to the composition, and table salt has a weight percentage in a range of 70-75% with respect to the composition.
8. A process for preparing the saltiness enhancer composition as claimed in claim 1, said process comprising:

a) obtaining monocalcium phosphate;
b) obtaining dicalcium phosphate;
c) obtaining tricalcium phosphate;
d) obtaining table salt; and
e) contacting monocalcium phosphate, dicalcium phosphate, tricalcium phosphate, and table salt, to obtain the composition.
9. A composition comprising:
a) a food product; and
