Abstract: The present disclosure provides condiment formulation comprising: (a) at least one salt enhancing additive; and (b) at least one salt, wherein the at least one salt to the at least one salt enhancing additive weight ratio is in the range of 25:1 - 28:1. The condiment formulation containing said combination which when used in defined w/w ratios enhances saltiness of food and snacks without compromising on the palatability of the composition. The present disclosure further provides a convenient process for preparing the composition.
I/We Claim:
1) A condiment formulation comprising:
(a) at least one salt enhancing additive; and
(b) at least one salt,
wherein the at least one salt to the at least one salt enhancing additive weight ratio is in the range of 25:1 -28:1.
2) The condiment formulation as claimed in claim 1, wherein the salt enhancing additive is chilli powder having a capsaicin content in a range of 0.03 - 0.5% with respect to the chilli powder.
3) The condiment formulation as claimed in claim 1, wherein the at least one salt enhancing additive has a weight percentage in a range of 2 - 5 % with respect to the formulation.
4) The condiment formulation as claimed in claim 1, wherein the at least one salt has a weight percentage in a range of 95 - 99 % with respect to the formulation.
5) A process of preparing the condiment formulation as claimed in claim 1, the process comprising:
(a) obtaining at least one salt enhancing additive;
(b) obtaining at least one salt; and
(c) contacting the at least one salt enhancing additive, and the at least one salt, to obtain the condiment formulation.
6) The process as claimed in claim 5, wherein contacting the at least one salt enhancing additive, and the at least one salt is optionally carried out in presence of a solvent followed by drying, to obtain the condiment formulation.
7) A composition comprising:
(a) a food product; and
(b) the condiment formulation as claimed in any one of the claims 1-4.
8) The composition as claimed in claim 7, wherein the condiment formulation
to the food product weight ratio is 98:2 - 99.5:0.5.
9) The composition as claimed in claim 7, wherein the food product is selected from a group consisting of confectionery, bakery product, dairy product, meal replacement product, soup product, dehydrated and culinary food, frozen food, canned food, snack food, dips, oils and fats, seasoning, and combinations thereof.
