Abstract: ABSTRACT OF THE INVENTION The amaranth seeds belonging to the Amaranthaceae family. The present aim to invent yoghurt using the milk obtained from amaranth seeds. In this study, amaranth milk, a vegetarian beverage, was invented to satisfy the dietary requirements for both children and adults. Amaranth milk is then utilised to manufacture the yoghurt. The yoghurt scored 8.3 on the hedonic scale, respectively, indicating that customers appreciate them very highly. It has a number of pro's, including the fact that it is a vegan food and it improves the health of our stomach's gut and contains twice amount of nutrient as compared with other pseudo cereals and it also makes the consumers to consume it in more amount by its natural colour which resemble as animal's milk yoghurt.
CLAIMS
1. Amaranth seeds a plant-based yoghurt prepared from the amaranth milk, which is best alternate for yoghurt made with animal's milk.
2. Comparatively speaking to regular yoghurt, it has higher nutrient.
3. Adding stabilizer to the milk can enrich the texture of the yoghurt prepare from the amaranth milk.
4. Amaranth seed milk is used to make yoghurt, which has pale cream colour like animal's yoghurt.
