Abstract: Methods for extraction and isolation of protein and high protein isolates from cereal grains such as rice are provided. A method may comprise milling the cereal grains to a predetermined size, adding water to the milled 10 powder to form a slurry, adding a predetermined amount of an enzyme to the slurry and heating at a predetermined temperature for a predetermined time, and filtering the slurry to obtain a solid residue and a liquid by-product. The method may be repeated one or more times with the 15 solid residue so obtained using an enzyme or a water wash or a chemical wash. The end product obtained is a high protein content food grade isolate which his fit for human consumption. The protein isolate may have applications in various food products.
