Abstract: ABSTRACT FERMENTATION PROCESS TO ENHANCE NUTRIENT AVAILABILITY The present disclosure discloses a process of fermenting flour of Pennisetum glaucum that includes the steps of obtaining flour of Pennisetum glaucum, obtaining at least one solvent, contacting flour of Pennisetum glaucum with the at least one solvent to obtain a first mixture, processing the first mixture under a pressure in a range of 12-18 psi, at a temperature in a range of 105-130°C, for a time period in a i range of 12-20 minutes to obtain a processed first mixture, contacting the processed first mixture with at least one strain of Saccharomyces cerevisiae to obtain a second mixture; and incubating the second mixture for a time period in a range of 12-50 hours, to obtain a fermented flour of Pennisetum glaucum. The fermented flour obtained by the process as disclosed herein provides enhanced bio-availability of nutrients.
I/We Claim:
1. A process of fermenting flour of Pennisetum glaucum, said process
comprising:
a) obtaining flour of Pennisetum glaucum;
b) obtaining at least one solvent
c) contacting flour of Pennisetum glaucum with the at least one solvent to obtain a first mixture;
d) processing the first mixture under a pressure in a range of 12 - 18 psi, at a temperature in a range of 105-130°C, for a time period in a range of 12-20 minutes to obtain a processed first mixture;
e) contacting the processed first mixture with at least one strain of Saccharomyces cerevisiae to obtain a second mixture; and
f) incubating the second mixture for a time period in a range of 12-50 hours, to obtain a fermented flour of Pennisetum glaucum.
2. The process as claimed in claim 1, wherein the second mixture is incubated for a time period in a range of 12-24 hours.
3. The process as claimed in claim 1, wherein the second mixture is incubated for a time period in a range of 12-18 hours.
4. The process as claimed in claim 1, wherein incubating the second mixture is done at a temperature in a range of 32-40°C.
5. The process as claimed in claim 1, wherein the flour of Pennisetum glaucum is either flour of sprouted Pennisetum glaucum, or flour of unsprouted Pennisetum glaucum, or combinations thereof.
6. The process as claimed in claim 1, wherein the at least one solvent is selected from a group consisting of water, phosphate buffered saline, and combinations thereof.
7. A fermented flour obtained by a process as claimed in any one of the claims 1-6.
8. The fermented flour as claimed in claim 7, wherein the fermented flour provides enhanced bio-availability of nutrients.
9. A composition comprising:
a) at least one food product; and
b) a fermented flour as obtained in claim 7.
10. The composition as claimed in claim 9, wherein the at least one food product is selected from a group consisting of biscuits, snacks and other extruded products, beverages, food supplements, and combinations thereof.
