Abstract: FORMULATION OF MULTI COMPOSITE FLOUR COOKIES ENRICHED WITH VACUUM DRIED BUTEA MONOSPERMA FLOWER POWDER This present invention on production of multi composite flour cookies with vacuum dried butea monosperma flower powder. Palash flower endowned with numerous advantageous characteristics that make it a potent medicinal plant. This includes laxative, aphrodisiac, anthelmintic, anti-diabetic, antistress, hepatoprotective, antifungal, astringent, anti-diarrheal, anti-diabetic and antioxidant properties. This present invention of palash cookies purported pharmacological characteristics include antidiarrheal, antiestrogenic, and antifertility, as well as antimicrobial, antifungal, antibacterial and antisress properties. This palash cookies developed from combination of multi grain flours Ragi, Bajra, refined wheat flour and vacuumed dried Palash flower with a high pharmacological and medicinal properties.

Bajra flour is high in protein, Ragi flour is also high in protein and gluten free fiber good for heart and diabetics. This healthy nutraceutical cookie based on mixed nutritional quality of multiple flours and vacuum dried palash flower powder. The aim of these invention healthy cookies free from multiple diseases and use as daily healthy diet with delicious taste.
The primary object of the invention is formulation of multi composite flour cookies enriched with vacuum dried Butea monosperma flower powder.

collecting of butea monosperma flowera, washing, vacuum drying, and grinding;
selecting grains (raagi, bajra, refined wheat flour), sorting, grading, and milling;
adding weighted ingredients, kneading properly;
molding, cutting, and baking; and
cooling the baked cookies and after packaging stored.
The method as claimed in claim 2, wherein the said cookies are enriched with titrable acidity (0.34%), phenolic content (352.70 mg/100gm), carbohydrate contain (3g), protein contain (0.5 g), moisture contain (5.02%), ash contain (58%), fat contain (2.5%) and pH (5.56).
