Manufacturing Of Protein Enriched Muffin Using Spirulina And Red Banana

Abstract: Child malnutrition is a major public problem. Globally, in 2020, 149 million children less than 5 years of age were estimated to be stunted (too short for their age) and 45 million were wasted (too thin for their height). The most consistent factors associated with child malnutrition are maternal education, household income, maternal nutrition status, age of the child, availability of sanitation facilities at home, size of the family, birth order in the family, and child birth weight. Spirulina (Artrospira plantensis) is a type of blue-green algae. Spirulina is also known as cyanobacteria, and it is one of the single-cell proteins. It has spiral-shaped microscopic aquatic plants. Spirulina is high in protein (60–70%), minerals, and vitamins, among other things. The Red Dacca Banana (Musa acuminata) is a variety of banana. Red Dacca is rich in calcium, potassium, and iron. A muffin is a baked cupcake that is typically small in size, soft to eat, and sweet. It usually contains health mix, brown jaggery, egg whites, spirulina, and red bananas. Brown jaggery is made from sugarcane juice, which contains vitamins B, C, D, and E. It is essential for normal human growth and functioning. Spirulina (Arthrospira plantensis) and red banana (Musa acuminata) increase protein levels in all humans, especially malnourished people who have deficiencies in vitamins and minerals. The present investigation aims to study the nutritional quality of muffins as influenced by different treatments, such as marinating and baking. It was found to be nutritionally and organoleptically superior and acceptable to the consumer. Physical and chemical characteristics are mentioned for analysis. The levels of protein, carbohydrate, energy, ash content, fat content, moisture content, and fiber were determined. Here are the benefits of our prepared muffin. A cost analysis and shelf-life test were mentioned. This research would help the public realize the importance of consuming spirulina. It is beneficial to society because it promotes a healthy lifestyle and has a delicious taste. The red Dacca Spirulina Muffin is affordable and comparatively highly nutritious. These muffins are high in protein, so they can be used as a supplement for people who are malnourished.

Spirulina is a Sea food which has more protein even compared with Moringa.
2. While other countries use spirulina in their daily food but in India, it is used only as Capsules and in powder form.
3. To add spirulina in our daily food, we made a step to make this Muffins.
4. We add red banana in the Muffin to reduce the bitterness of the Spirulina. Additional ingredients are Butter, Egg White, Vegetable oil, Health mix powder, Vanilla Essence, Baking powder, Brown Sugar and Milk.
5. We took 2g of Spirulina with 200g of health mix powder in the Ratio of 1:100 along with other ingredients to make the semi solid muffin mix of 0.45 kg at 150°C in the microwave oven to get the Healthy Spirulina Muffin. It can be mainly consumed by ulcer and protein deficiency persons.
6. It can be used as substitute food to malnutrition patients.
