Abstract: This invention relates to a sustainable process for the preparation of nutrients retained processed nendran banana peel powder as food additive to increase the nutritive value and shelf-life of food products, comprising the steps of procuring nendran banana peels, washing the peels, soaking them in a lemon juice and water solution for 10-20 minutes to effectively remove impurities and other contaminants and also preventing oxidation of peels; subjecting the peels to thermal processing at a range of temperature 90-120 degrees Celsius for 2-4 hours, for enhancing the flavour and texture of the product, boosting nutrient absorption, extending shelf life and improving functional qualities of the product followed by subjecting the nendran banana peels which have undergone thermal processing, to drying and grinding to a powder, ready to be used as a nutritional-rich food additive.
