Claims

1. A food preparation method comprising the steps of mixing gram flour, M.oleifera leaves powder, chopped tomato, onion, and spices/condiments in a bowl; adding a pre-heated water at temperature of 28 - 35 C to avoid lumps; cooking the mixture on medium flame at 80- 120 C for 5 to 10 minutes unt; reducing the flame to low, cooking the mixture for another 10 minutes at 75- 95 C with regular stirring ; spreading the batter on a plate in a thin layer having a theackness in rnage of 5 - 8 mm; allowing it to set for 15-25 minutes at a room temperature; and cutting it into a pre-set shapes.

2. The food preparation method of claim 1, wherein the gram flour is chickpea flour.

3. The food preparation method of claim 1, wherein the M.oleifera leaves powder is made by grinding the leaves of M.oleifera plant into a fine powder.

4. The food preparation method of claim 1, wherein the spices/condiments include cumin, coriander, turmeric, red chili powder, salt, and garam masala.

5. The food preparation method of claim 1, wherein the mixture is cooked in a non-stick pan.

(b) Sorting: The washed leaves are sorted based on predetermined quality criteria, including color, size, and overall condition. This step ensures the selection of the most suitable leaves, which contribute to the overall quality and efficacy of the final product. (c) Blanching: The sorted leaves are blanched in hot water for a specific duration, which is determined by employing the Response Surface Methodology for process optimization. (d) Drying: Following the blanching step, the leaves are spread out evenly and exposed to direct sunlight for a defined period to achieve the desired moisture content. (e) Pulverizing: The sun-dried leaves are ground into a fine powder of a predetermined particle size using suitable grinding equipment.
