Abstract: NACHOS ENRICHED WITH STELLARIA MEDIA AND/OR URTICA DIOICA LEAVES AND METHOD OF MAKING THEREOF The present invention discloses nachos enriched with Stellaria media leaves and/or Urtica dioica leaves. The composition comprises maize, multigrain, millets, beans, seeds, Stellaria media leaves and/or Urtica dioica leaves, milk, flavouring and seasoning agents. The invention also discloses a method of making nachos enriched with Stellaria media leaves and/or Urtica dioica leaves. The nachos are nutritionally rich made by baking and retain the texture, color, appearance, and flavor of fried nachos.
1. A composition of nachos enriched with Stellaria media leaves and/or Urtica dioica leaves, said composition comprises maize, multigrain, millets, beans, seeds, Stellaria media leaves and/or Urtica dioica leaves, milk, flavouring and seasoning agents.
2. The composition as claimed in claim 1, wherein said multigrain comprises cereals selected from wheat, oat, barley, quinoa, sorghum, bajra, or a combination thereof and pulses selected from chana, lupins, peas, chickpeas, red kidney beans, or a combination thereof.
3. The composition as claimed in claim 1, wherein said multigrain comprises cereals and pulses in a ratio ranging from 3:1 to 2:2.
4. The composition as claimed in claim 1, wherein said millets are selected from banyard, proso, barley, sorghum, ragi, kodo, teff, foxtail, little, pseudo, or a combination thereof.
5. The composition as claimed in claim 1, wherein said beans are selected from faba beans, navy beans, soya beans, lima beans, pinto beans, black beans, cranberry beans, fava beans, black-eyed peas, or a combination thereof.
6. The composition as claimed in claim 1, wherein said seeds are edible seeds selected from halim seeds, water melon seeds, sesame seeds, pumpkin seeds, niger seeds, sunflower seeds, flax seeds, musk-melon seeds, caraway seeds, or a combination thereof.
7. The composition as claimed in claim 1, wherein said composition comprises maize flour 45%, multigrain flour 10-14%, millet flour 15%, bean flour 10-14%, seeds 5%, milk 4%, Stellaria media leaves powder and/or Urtica dioica leaves powder 2-10%, seasoning and flavouring agent 1%.
8. The composition as claimed in claim 1, wherein baked nachos made up of the said composition are stable for at least 3 months in conventional packaging and at least 6 months in green nanopackaging at room temperature.
9. A method of making nachos enriched with Stellaria media leaves and/or Urtica dioica leaves, said method comprises - Preparing mixture of Stellaria media and/or Urtica dioica leaves powder, maize flour, multigrain flour, millet flour, bean flour, seeds by mixing, - making dough by mixing the mixture with milk, - covering the dough with muslin cloth and resting for at least 20 min. at room temperature, - pinching lemon size ball of dough and putting between two cellophane sheets greased with oil, - rolling the ball between the cellophane papers as thin as possible into circle, - separating the rolled circle from one of the cellophane sheets and cutting into equal stripes, - cutting the stripes in triangles shape and taking out to place into a baking tray, - putting the baking tray in oven for baking for 10-12 min at a temperature of 350°F. - cooling the baked nachos and sprinkling over the seasoning agents and flavouring agents.

The method as claimed in claim 9, wherein multigrain comprises cereals selected from wheat, oat, barley, quinoa, sorghum, bajra, or a combination thereof and pulses selected from chana, lupins, peas, chickpeas, red kidney beans, or a combination thereof, said cereals and pulses being in a ratio ranging from 3:1 to 2:2.
11. The method as claimed in claim 9, wherein said millets are selected from banyard, proso, barley, sorghum, ragi, kodo, teff, foxtail, little, pseudo, or a combination thereof.
12. The method as claimed in claim 9, wherein said beans are selected from faba beans, navy beans, soya beans, lima beans, pinto beans, black beans, cranberry beans, fava beans, black-eyed peas, or a combination thereof.
13. The method as claimed in claim 9, wherein said seeds are edible seeds selected from halim seeds, water melon seeds, sesame seeds, pumpkin seeds, niger seeds, sunflower seeds, flax seeds, musk-melon seeds, caraway seeds, or a combination thereof.
14. The method as claimed in claim 9, wherein said nachos comprises maize flour 45%, multigrain flour 10-14%, millet flour 15%, bean flour 10-14%, seeds 5%, milk 4%, Stellaria media leaves powder and/or Urtica dioica leaves powder 2-10%, seasoning and flavouring agent 1%.
15. The method as claimed in claim 9, wherein said nachos are stable for at least 3 months in conventional packaging and at least 6 months in green nanopackaging at room temperature.
Description:FIELD OF THE INVENTION
The present invention relates to the field of food and nutrition. The present invention particularly relates to composition of nachos enriched with Stellaria media leaves and/or Urtica dioica leaves and method of making thereof.
BACKGROUND OF THE INVENTION
Snack foods such as nachos are popular consumer food items, specifically among teenage groups. Nachos are prepared by using refined corn and wheat flour. Prior art for making nachos is only by using hot oil known as frying.
In recent years, consumer demand has been dramatically increasing for healthy foods in general and healthy snack foods in particular. For many consumers, deep-fried food and refined flour are not healthy options for snacks, especially for children in the teenage group, as these may cause obesity in this age group of children.
No prior art process has been successful in making nachos without refined wheat flour while retaining the texture, appearance, crispiness and nutritive value. Inventors of the present invention provides a healthy alternative to fried nachos by using the baking method and adding different legumes, seeds, millet, and specific leaves powder with an appropriate level, while retaining the texture, color, appearance, and flavor, of the standard nachos available in the market, and providing high nutritional value.
OBJECTS OF THE INVENTION
The main object of the present invention to provide composition for nachos enriched with Stellaria media leaves and/or Urtica dioica leaves.
Another object of the present invention is to provide nachos enriched with Stellaria media leaves and/or Urtica dioica leaves that are nutritionally valuable snacks for all age groups including growing children and adults.
Yet another object of the present invention is to provide a method of making nachos enriched with Stellaria media leaves and/or Urtica dioica leaves.
SUMMARY OF THE INVENTION
Accordingly, the present invention provides composition for nachos enriched with Stellaria media leaves and/or Urtica dioica leaves. The invention also provides nachos that are nutritionally valuable snacks for all age groups including growing children and adults.
The composition of nachos comprises maize, multigrain, millets, beans, seeds, Stellaria media leaves and/or Urtica dioica leaves.
The composition also comprises milk and flavoring and seasoning agents.
The invention also comprises a method of making the nachos enriched with Stellaria media leaves and/or Urtica dioica leaves.

DETAILED DESCRIPTION OF THE INVENTION WITH NON-LIMITING EXAMPLES AND EMBODIMENTS
The present invention provides composition for nachos enriched with Stellaria media leaves and/or Urtica dioica leaves. The invention nachos of the invention are nutritionally valuable snacks for all age groups including growing children and adults.
The composition of nachos comprises maize, multigrain, millets, beans, seeds, Stellaria media leaves and/or Urtica dioica leaves, milk, and flavouring and seasoning agent.
The composition comprises maize flour 45%, multigrain flour 10-14%, millet flour 15%, bean flour 10-14%, seeds 5%, milk 4%, Stellaria media leaves powder and/or Urtica dioica leaves powder 2-10%, seasoning and flavouring agent 1%.
The multigrain comprises cereals and pulses in a ratio ranging from 3:1 to 2:2. The cereals are selected from wheat, oat, barley, quinoa, sorghum, bajra, or a combination thereof. The pulses are selected from chana, lupins, peas, chickpeas, red kidney beans, or a combination thereof.
The millets are selected from banyard, proso, barley, sorghum, ragi, kodo, teff, foxtail, little, pseudo, or a combination thereof.
The beans are selected from faba beans, navy beans, soya beans, lima beans, pinto beans, black beans, cranberry beans, fava beans, black-eyed peas, or a combination thereof.
The seeds are edible seeds with nutritional value and pleasant taste. The seeds are selected from halim seeds, water melon seeds, sesame seeds, pumpkin seeds, niger seeds, sunflower seeds, flax seeds, musk-melon seeds, caraway seeds, or a combination thereof.
In an aspect of the invention, the composition of nachos comprises maize flour, multigrain flour, banyard millet flour, faba bean flour, halim seeds, Stellaria media leaves powder, milk, flavouring and seasoning agents.
In an aspect of the invention, the composition of nachos comprises maize flour, multigrain flour, banyard millet flour, faba bean flour, halim seeds, Urtica dioica leaves powder, milk, flavouring and seasoning agents.
In an aspect of the invention, the composition of nachos comprises maize flour, multigrain flour, banyard millet flour, faba bean flour, halim seeds, Stellaria media leaves powder, Urtica dioica leaves powder, milk, flavouring and seasoning agents.
In an aspect of the invention, the composition of nachos comprises maize flour, multigrain flour, sorghum flour, pumpkin seeds, Stellaria media leaves powder, milk, flavouring and seasoning agents.
In an aspect of the invention, the composition of nachos comprises maize flour, multigrain flour, sorghum flour, pumpkin seeds, Urtica dioica leaves powder, milk, flavouring and seasoning agents.
In an aspect of the invention, the composition of nachos comprises maize flour, multigrain flour, sorghum flour, pumpkin seeds, Stellaria media leaves powder, Urtica dioica leaves powder, milk, flavouring and seasoning agents.
The leaves of Stellaria media and/or Urtica dioica in powder form are incorporated to increase the protein and fiber content as well as essential minerals like calcium and iron when it is compared with commercially available nachos in the market.
The invention provides a method of making nachos with baking, thus providing healthy alternative of baked nachos to fried nachos. The composition of the present invention specifically provides iron nutrition and prevents iron deficiency anemia.
In an example, the composition of nachos comprises maize flour (g), multigrain flour (g), banyard millet flour (g), faba bean flour (g), halim seeds (g), chilli powder (g), milk (ml), and Stellaria media leaves powder and/or Urtica dioica (g) as mentioned in Table 1. Five variants of the composition are made and tested for sensory analysis. The composition comprises maize flour 45%, multigrain flour 10-14%, banyard millet flour 15%, faba bean flour 10-14%, halim seeds 5%, milk 4%, chilli powder 1% and Stellaria media leaves powder 2-10%.

The leaves of Stellaria media Urtica dioica powder were used for incorporation in different food products for enhancing the nutrient profile as well as the sensory attributes of nachos. Fortification of the nachos with millet, beans, seeds, and leaves powder increases the protein, and fiber content as well as essential minerals like calcium and iron when it is compared with commercially available nachos in the market. The nachos of the present invention are baked nachos yet have the desirable light, crispy, expanded texture, color, and flavor of fried nachos.

The proximate analysis and sensory evaluation shows that the nachos of the present invention are nutritionally rich as compared to the nachos available in the market. Nachos having 10% of leaves powder are most acceptable for all the sensory attributes compared with the control and other variants.
The invention also discloses a method of making nutritionally rich baked nachos. The method comprises mixing of Stellaria media and/or Urtica dioica leaves powder, maize flour, multigrain flour, millet flour, bean flour, seeds and making dough by mixing with milk. The dough is covered with muslin cloth and is rested for at least 20 min. at room temperature. The dough is then pinched off in lemon size balls and put between two cellophane sheets greased with oil. The ball between the cellophane papers is rolled as thin as possible into circle. The thinness is such that it becomes almost transparent. The thin circle is then separated from one of the cellophane sheets and cut into equal stripes with the help of cutter. The stripes are then cut to make a nachos size triangle. The triangles are then taken out from the sheets. Nachos size triangles are then placed into the baking tray and baked for 10-12 min at a temperature of 350°F. Baked nachos are cooled and seasoning agents and flavouring agents are sprinkled over them.
The multigrain used in the method of making baked nachos comprises cereals and pulses in a ratio ranging from 3:1 to 2:2. The cereals are selected from wheat, oat, barley, quinoa, sorghum, bajra, or a combination thereof. The pulses are selected from chana, lupins, peas, chickpeas, red kidney beans, or a combination thereof. The millets are selected from banyard, proso, barley, sorghum, ragi, kodo, teff, foxtail, little, pseudo, or a combination thereof. The beans are selected from faba beans, navy beans, soya beans, lima beans, pinto beans, black beans, cranberry beans, fava beans, black-eyed peas, or a combination thereof. The seeds are edible seeds with nutritional value and pleasant taste. The seeds are selected from halim seeds, water melon seeds, sesame seeds, pumpkin seeds, niger seeds, sunflower seeds, flax seeds, musk-melon seeds, caraway seeds, or a combination thereof.
The shelf life of baked nachos of the present invention is at least 3 months in conventional packaging and 6 months in green nanopackaging at room temperature. The assessment of the shelf life of the nachos in conventional and green nanopackaging is still in process.
The nachos of the present invention are healthy alternative to fried nachos while retaining the texture, color, appearance, and flavor of fried nachos. The baked nachos has high nutritional value due to presence of Stellaria media leaves/ Urtica dioica in combination with the millets, beans and seeds. , Claims:We Claim
1. A composition of nachos enriched with Stellaria media leaves and/or Urtica dioica leaves, said composition comprises maize, multigrain, millets, beans, seeds, Stellaria media leaves and/or Urtica dioica leaves, milk, flavouring and seasoning agents.
2. The composition as claimed in claim 1, wherein said multigrain comprises cereals selected from wheat, oat, barley, quinoa, sorghum, bajra, or a combination thereof and pulses selected from chana, lupins, peas, chickpeas, red kidney beans, or a combination thereof.
3. The composition as claimed in claim 1, wherein said multigrain comprises cereals and pulses in a ratio ranging from 3:1 to 2:2.
4. The composition as claimed in claim 1, wherein said millets are selected from banyard, proso, barley, sorghum, ragi, kodo, teff, foxtail, little, pseudo, or a combination thereof.
5. The composition as claimed in claim 1, wherein said beans are selected from faba beans, navy beans, soya beans, lima beans, pinto beans, black beans, cranberry beans, fava beans, black-eyed peas, or a combination thereof.
6. The composition as claimed in claim 1, wherein said seeds are edible seeds selected from halim seeds, water melon seeds, sesame seeds, pumpkin seeds, niger seeds, sunflower seeds, flax seeds, musk-melon seeds, caraway seeds, or a combination thereof.
7. The composition as claimed in claim 1, wherein said composition comprises maize flour 45%, multigrain flour 10-14%, millet flour 15%, bean flour 10-14%, seeds 5%, milk 4%, Stellaria media leaves powder and/or Urtica dioica leaves powder 2-10%, seasoning and flavouring agent 1%.
8. The composition as claimed in claim 1, wherein baked nachos made up of the said composition are stable for at least 3 months in conventional packaging and at least 6 months in green nanopackaging at room temperature.
9. A method of making nachos enriched with Stellaria media leaves and/or Urtica dioica leaves, said method comprises
- Preparing mixture of Stellaria media and/or Urtica dioica leaves powder, maize flour, multigrain flour, millet flour, bean flour, seeds by mixing,
- making dough by mixing the mixture with milk,
- covering the dough with muslin cloth and resting for at least 20 min. at room temperature,
- pinching lemon size ball of dough and putting between two cellophane sheets greased with oil,
- rolling the ball between the cellophane papers as thin as possible into circle,
- separating the rolled circle from one of the cellophane sheets and cutting into equal stripes,
- cutting the stripes in triangles shape and taking out to place into a baking tray,
- putting the baking tray in oven for baking for 10-12 min at a temperature of 350°F.
- cooling the baked nachos and sprinkling over the seasoning agents and flavouring agents.
10. The method as claimed in claim 9, wherein multigrain comprises cereals selected from wheat, oat, barley, quinoa, sorghum, bajra, or a combination thereof and pulses selected from chana, lupins, peas, chickpeas, red kidney beans, or a combination thereof, said cereals and pulses being in a ratio ranging from 3:1 to 2:2.
11. The method as claimed in claim 9, wherein said millets are selected from banyard, proso, barley, sorghum, ragi, kodo, teff, foxtail, little, pseudo, or a combination thereof.
12. The method as claimed in claim 9, wherein said beans are selected from faba beans, navy beans, soya beans, lima beans, pinto beans, black beans, cranberry beans, fava beans, black-eyed peas, or a combination thereof.
13. The method as claimed in claim 9, wherein said seeds are edible seeds selected from halim seeds, water melon seeds, sesame seeds, pumpkin seeds, niger seeds, sunflower seeds, flax seeds, musk-melon seeds, caraway seeds, or a combination thereof.
14. The method as claimed in claim 9, wherein said nachos comprises maize flour 45%, multigrain flour 10-14%, millet flour 15%, bean flour 10-14%, seeds 5%, milk 4%, Stellaria media leaves powder and/or Urtica dioica leaves powder 2-10%, seasoning and flavouring agent 1%.
