Process For Production Of Galacto Oligosaccharides

Abstract: The present disclosure relates to a process for production of galacto-oligosaccharides comprising the use of a lactase enzyme along with an inorganic salt. The said process results in enhanced conversion of lactose to galacto-oligosaccharide and provides with a product with increased galacto-oligosaccharide content.

Specification

Claims: 1. A process for conversion of lactose to galacto-oligosaccharides in a medium, said process comprising:
(a) obtaining a medium comprising lactose;
(b) obtaining a premix of a lactase and a salt;
(c) adding the premix to the medium to obtain a mixture; and
(d) incubating the mixture at a temperature in the range of 3-8 oC for a time period in the range of 4-8 hours for conversion of lactose to galacto-oligosaccharide.
2. The process as claimed in claim 1, wherein lactose concentration in the medium is in the range of 0.5-20%.
3. The process as claimed in claim 1, wherein the medium is selected from the group consisting of milk, skimmed milk, partly skimmed milk, whey protein, casein, lactose, and combinations thereof.
4. The process as claimed in claim 1, wherein the medium is milk.
5. The process as claimed in claim 1, wherein the premix comprises 1-10 units/g of the lactase and 0.005-0.05% of the salt with respect to the medium.
6. The process as claimed in claims 1 and 5, wherein the salt is selected from the group consisting of KCl, MgSO4, MnSO4, NaCl, CaCl2, and combinations thereof.
7. The process as claimed in claim 1, wherein lactose conversion in the medium is in the range of 40-90%.
8. The process as claimed in claim 1, wherein incubating of the mixture leads to conversion of lactose to galacto-oligosaccharides, monosaccharides, and combination thereof.
9. A product obtained from the process as claimed in any of the claims 1-8, wherein the product has galacto-oligosaccharide content in the range of 15-23%.
10. A product with lactose content in the range of 0.17-8%, and galacto-oligosaccharide content in the range of 15-23%.
