Abstract: The present disclosure relates to a process and a composition that can be employed for reduction of colour that is developed in a substance due to Maillard reaction. The process and composition can be applied to a substance selected from a group consisting of foodstuffs, substances comprising whey-protein, cosmetics, and substances for personal care.
Claims:1. A process to reduce colouration due to Maillard reaction in a substance, said process comprising the steps of:
(a) obtaining a substance coloured due to Maillard reaction;
(b) contacting the substance with sodium bisulfite and zinc to obtain a mixture; and
(c) incubating the mixture,
to obtain a substance with reduced colouration.
2. The process as claimed in claim 1, wherein zinc is in the form of zinc dust, zinc granules, zinc sheet, and combinations thereof.
3. The process as claimed in claim 1, wherein sodium bisulfite to zinc w/w ratio in the mixture is in the range of 1:2 – 2:1.
4. The process as claimed in claim 1, wherein sodium bisulfite to zinc w/w ratio in the mixture is 1:1.
5. The process as claimed in claim 1, wherein sodium bisulfite w/v percentage in the mixture is in the range of 0.025%- 0.2%.
6. The process as claimed in claim 1, wherein zinc w/v percentage in the mixture is in the range of 0.025%- 0.2%.
7. The process as claimed in claim 1, wherein incubating the mixture is at a temperature in the range of 20- 37oC.
8. The process as claimed in any of the claims 1 or 7, wherein incubating the mixture is for a time-period until desired level in reduction of colouration has been attained.
9. The process as claimed in any of the claims 1 or 7, wherein incubating the mixture is for a time-period in the range of 1-4 days.
10. The process as claimed in claim 1, wherein the substance is selected from a group consisting of foodstuffs, substances comprising whey-protein, cosmetics, and substances for personal care.
11. A composition to reduce colouration due to Maillard reaction in a substance, said composition comprising:
(a) sodium bisulfite; and
(b) zinc,
wherein sodium bisulfite to zinc w/w ratio in the mixture is in the range of 1:2 – 2:1.
12. The composition as claimed in claim 11, wherein zinc is in the form of zinc dust, zinc granules, zinc sheet, and combinations thereof.
13. The composition as claimed in claim 11, wherein sodium bisulfite to zinc w/w ratio in the mixture is 1:1.
