Abstract: Tamarind seed is a by-product of tamarind pulp industry. The presence of tannin and other coloring matter in the testa makes the whole seed unsuitable for consumption. Tamarind seed is the raw material used in the manufacture of tamarind seed kernel powder, polysaccharide (jellose), adhesive and tannin. The seeds are also used for other purposes and are presently gaining importance as an alternative source of protein, rich in some essential amino acids. Protein extracted from tamarind ranges from 14-25%. This extracted protein is utilized for preparation of various value added products. These products are to be utilized in the protein deficient areas and utilized tamarind industrial waste.
This invention relates to waste product of tamarind industry were used to obtain protein that can be incorporated in value added product development.
Background of the Invention
US4895938A: A method for separating polysaccharides from tamarind seeds, comprising:
(1) Pulverizing the tamarind seeds to form particles of less than 80 microns;
(2) Dispersing the particles in an aqueous medium consisting essentially of water and 5-60% by weight of at least one water soluble organic solvent;
(3) Classifying the dispersion in a hydrocyclone, whereby the particles of polysaccharides descend to the bottom of the hydrocyclone, from which they are discharged; and whereby particles of other components, in particular proteins, simultaneously rise to the top of the hydrocyclone, from which they are discharged.
Research Gap: Polysaccharides are seprated from tamarind seeds and our work focused on protein extraction.
US5876729A: The use of extracts of tamarind seeds enriched in xyloglycans as an active agent in a cosmetic and/or pharmaceutical product for topical usage for the skin and/or other exposed parts of the body. The extracts of tamarind seeds enriched in xyloglycans are present in the cosmetic and/or pharmaceutical product for topical use in a total weight fraction comprised between 0.05% and 100%, preferably between 1% and 25% by weight.
Research Gap: Xyloglycans are extracted to utilize in cosmetic industry. Our work is focused on Protein extraction and its utilization in Food Industry
EP2575971B1: The present invention relates to an anti-inflammatory pharmaceutical and/or dermocosmetic composition comprising tamarind seed polysaccharide in combination with an extract of Ferula spp as active ingredients.
Research Gap: Polysaccharides from tamarind seeds and its use in treatment of inflammatory diseases

Present invention is tannin and other coloring matter in the testa makes the whole seed unsuitable for consumption. Tamarind seed is the raw material used in the manufacture of tamarind seed kernel powder, polysaccharide (jellose), adhesive and tannin.
