, Description:Technical Field of the Invention
The present invention is related generally to food industry, and more particularly to the food industry which produces flat breads including chapatti, roti in large scale and small scale.
Background of the Invention
The dough dividing machines are mainly used in hotels, restaurants, and so forth where the flat breads are required to be made in small scale. In order to achieve the same, several types of industrial equipment are used through which volumetric division of dough can be achieved which can include rounding up the dough, rolling the dough and so forth, that replaces the manual labor and saves time consumed in the same.
The conventional dough divider can be used for cutting and rounding the dough which can be made of cutting blades that are used to cut the dough by pressing the dough placed in the reels plates, preparing it for the cutting process. Once the plates are arranged, the dough is cut and the dough rounding system is used to round up the dough. Space between the plates is adjusted clearly to get dough of equal volume.
There are several prior art patents which describe various systems and methods which are used for cutting the dough.
US patent application 4368019A by Thompson Daniel T discloses a compact dough divider and forming machine. A dough receiving, shaping, dividing and forming machine for making dough bodies of predetermined size and configuration from an initially unshaped batch of dough in a continuous manner in a single machine frame has an in-feed conveyor for receiving a batch of unshaped dough and conveying it to a pre-shaping location, a pair of laterally spaced dough batch side roller shaping rollers at said pre-shaping side bath into a uniform width, a pair of vertically shaped top and bottom roller pre-shaping and dough advancing rollers for pre-shaping said batch into a uniform height and advancing said batch from between said side shaping means to a divider location, dough divider means at the divider location for receiving the dough batch in a pre-shaped configuration, shaping it to two generally rectangular cross section strips of dough and advancing the strips to a cut-off location, dough cut-off knives at the cut-off location for dividing the two strips alternately into parts of determinable size, separating such parts in sequence from the strips and delivering them individually to a forming location, a dough forming means at the forming location for receiving the individual dough parts and forming them into toroids or alternatively into dough balls of various sizes; roller means are provided for sensing the buildup of the dough batch between the top and bottom roller and the dough divider means; and an electric drive is provided for varying the advancement of the dough batch by the advancing roller in response to the amount of buildup of dough sensed by said sensor roller.
US patent application 20060236872A1 by Robert Nordberg and Rajagopalan Chandrasekhar discloses machine for making thin flatbread which comprises of a manually loaded flour bin and a manually loaded water tank. A flour and a water dispenser; a pair of batch mode devices each of which performs the actions of a mixer and a dispensing pump. An endless sheet of dough extruder discharging vertically downward onto an inclined hot plate. A hot plate vibrator. A second inclined hot plate. A tension-limiting means including a light sensor and a pair of rollers which passes the sheet either through a cutter and batch-gathering means or through a serrator followed by a vertical pass through oven and then through a cutter and batch-gathering means.
US patent application 3794234A by D Pardo discloses dough batching machine. Means for batching bread dough wherein a vertical funnel has an outlet having a curved concave edge viewed in a direction transverse to the outlet. The edge is prolonged at least unilaterally in an arch approximately as wide as the outlet. A rotating body is coaxially disposed to the arched edge of the funnel opening and has a cylindrical cavity transverse to the axis of the body with a piston operating therein. The rotating body has a cylindrical lateral surface capable of closing the outlet. The cavity vertically aligns with the outlet and is capable of directly receiving from the funnel a quantity of dough contained therein so that it may then, upon rotation of the rotating body, deliver an amount of the dough to a point of utilization.
The technical problems associated with the existing systems and the above mentioned prior art patents is mainly associated with making same volume size of food product. Also the available automatic machines consume more electrical energy and require more space. Another issue associated with the machine is that the dough balls are not cut in equal volume all the time, as there is some percentage of error always present.
Therefore there is a need for a device for cutting dough in both large scale and small scales, with volume net cutter mechanism which can provide equal volume of dough proportions every time the dough is cut.
Summary of the Invention
The present invention discloses a device which can be used for cutting a medium with a string or wire rope as a blade. The device is developed for the purpose of cutting the dough made of a flour and water, and can be cut into equal volumes of dough proportions.
The device comprises of a base and a frame connected by a hinge or spring assembly for respective movement between a closed, cutting position and an open position; where a base frame having a first end configured for engaging said hinge or spring attachment point, and a second end; and a removable mold mounted on the frame, and having at least one guide channel for guiding said string or wire rope blade for cutting said medium.
According to the present invention, the Volume Net-Cutter Mechanism (VNCM) in the stretched thread mounted machine cuts the proper size of dough. The VNCM is made by a single spring for cutting and returnable operation. Each ball of dough cuts proper size and exact volume with the help of different size of molds and Cutter Base Plate.
