Abstract: A process is described for enzymatic removal of an ester group to transform a sucrose-6,6"-diester to a sucrose-6-ester. The sucrose-6-ester formed in this way can be subjected to a process of production of trichlorogalactosucrose comprising steps of chlorination, neutralization, deacylation, isolation and purification. 14
