Abstract: A sweetener is disclosed which has harmonious and full-bodied sweetness which is equivalent with that of sucrose and which in addition facilitates processing of foods sweetened with it by judicious incorporation of a biocatalyst, lactase. Further disclosed are a process for the preparation and use of said sweetener.

FIELD OF THE INVENTION
The present invention relates generally to formulations of sugar substitutes and more particularly to such compositions fortified by enzymes.
BACKGROUND OF THE PRESENT INVENTION
Heretofore, sugar (sucrose) has widely been used as a sweetener for foods and drinks. In particular, coffee drinks, including canned coffee, and carbonated beverages contain large amounts of sugar. Recently, because of the trend of increasing interest in health and low calorie foods and drinks, there is a tendency for ingestion of sugar, which can cause obesity, diabetes, and dental caries, to be reduced, and a sweetener having high sweetness intensity is replaced by sugar.
In order to overcome these problems, researchers have been looking for compositions a very low or no caloric content, are sweet but otherwise have a neutral taste and can be readily used in food stuff. Use of digestion-aiding enzymes has been sought as an added advantage to the above mentioned desired properties.
BRIEF DESCRIPTION OF THE INVENTION
In accordance with principles of the present invention, the present disclosure is directed towards product compositions as specified in Table 1.
