Abstract: The present invention relates to the development of a millet-based filled sandwich cookie formulated using plant-derived and functional ingredients. The cookie comprises a composite flour blend containing foxtail millet flour, little millet flour, and wheat flour, wherein coconut powder is used as a fat substitute in place of conventional butter. The filling is a sapodilla-based formulation prepared by steaming sapodilla fruit, followed by mashing and blending with palm jaggery, dark chocolate, and chicory powder, wherein chicory powder functions as a cocoa powder substitute and flavour-enhancing agent. The filling is prepared separately and incorporated into the cookie dough by forming cavities in the dough prior to baking. The assembled filled cookies are baked at a controlled temperature of approximately 180 °C for about 20 minutes to obtain a sandwich-style cookie with a soft, cohesive internal filling. The invention provides a method for producing a nutritionally enriched baked product utilizing millets and under-utilized fruit ingredients, offering a natural, plant-based alternative to conventional cream-filled cookies.
